The color of the shell is merely a reflection of the breed of the hen. In general, but not always, hens with white feathers and earlobes lay white eggs and those with dark feathers and red earlobes lay brown eggs.

The hens are really laying, and with our guest hens, we are glad our customers are calling with big orders. I have a few that start to get over a week old, and they become egg salad for my lunch. Tuesday, when I joined my quilting group, I brought a bowl of my recipe and some crackers to share. I was surprised at the clean bowl when lunch was over because my egg salad used a small addition of curry. It was a hit! The other comment was that it was so yellow, but I think my free range eaters have as much to do with that as the curry.Often I make my egg salad with dill, but I was looking for something stronger lately. Above is a photo of the ingredients: Hard boiled egg, relish, mayo, pepper and curry powder. No salt needed, and I like to flavor without salt when I can. Curry carries the day as far as I'm concerned.
The quantities are really up to your taste, but this is a jumbo (that's all we get!) hard boiled egg, a heaping tablespoon of mayonnaise, a flat tablespoon of relish, a couple turns of ground pepper and a generous shake (1/2 tsp) of curry powder.
Blend nicely in a bowl, and serve as a sandwich or on a cracker. Makes a nice appetizer or lunch.

Yum! I'm not a big curry person, but this looks good. I just might use a little spicy mustard instead. Egg salad is a favorite in our house. :)

A post I can relate to:) We have an egg glut and not enough customers, so have been having lots of egg salad lately too. I have been putting a bit of 'sweet with heat' mustard in mine, but will have to try the curry and relish next time. A bit of chopped chives or parsley or onion tops is good too.
Looks delicious, even more so because I love curry (a fave in Kenya)...hadn't thought about relish, hmmm...have crumbled bacon into the curry mixture.
